I did it! I finally worked out a one month meal plan. This one I'm doing so I have meals for after baby is born that I won't have to make, so it runs from August 12 till September 16th... a bit more than one month, but I wanted to do it that way. So far, so good. Stuck with the plan and have a number of frozen meals ready already. It's great! For example, today's was a casserole. I made extra mashed potatoes (enough for 3 meals) Monday with the chicken, Tuesday was burritos (only ate 1/3 of the meat) and today I combined the two into a casserole... or two. One I froze, the other one we had for supper. Instant meal, little work necessary. I really should do this more often... it's just planning in advance that makes things difficult.
